Frederick J. DeMicco, Ph.D., RDN, HAFIA
Dr. Fred DeMicco is the Executive Director and Professor in the School of Hotel and Restaurant Management at Northern Arizona University. Formerly he was Professor and the Aramark Endowed Chair in the Lerner College of Business & Economics in Hospitality Business Management at the University of Delaware. He was the Department Chair there for seven years from 2001 to 2007. He was Associate Director in the School of Hotel, Restaurant and Recreation Management (HRRM) at Penn State University, where he was Professor-in-Charge of the Hotel & Restaurant Management undergraduate program and also Professor- in charge of the Master of Science and PhD graduate program for five years). He presently is a Conti Distinguished Professor at the Pennsylvania State University.
Dr. DeMicco is the President of International Academics and the Dean of Business Executive and Professional Programs at the Learning Village in Tuscany (SIAF) Campus in Volterra, Tuscany – the home of Innovation and Imagineering.
Dr. DeMicco was also a Darden Eminent Scholar Chair Visiting Professor to the University of Central Florida – Rosen College; the USF Sarasota- Manatee and Colorado State University and an Adjunct Professor in the Joseph R. Biden School of Public Policy & Administration, at the University of Delaware.
Dr. Fred DeMicco has worked in Healthcare at the Massachusetts General Hospital, Boston and at Walt Disney World in hospitality management where he also obtained a Ductorate Degree from Disney University, Orlando. Dr. DeMicco has worked as the Associate Director and Registered Dietitian at Virginia Tech Dining Services in charge of operations, planning and technology serving 10,000 meals per day. Dr. DeMicco is the Founder of the INNternationale, the international student house at the University of Delaware and has developed and led dozens of Penn State University and University of Delaware student and faculty study abroad programs to six Continents and 16 Study@Sea student cruise programs establishing lasting educational and student internship partnerships. Dr. DeMicco is also a Level I Sommelier.
Dr. DeMicco’ scholarly interests are in; International Strategic Management &Trends; International Medical Tourism/Travel and Health, Hospitality Management and Leadership; Managerial Accounting and Innovation. He has worked on projects with Aramark International at four Summer Olympic Games (living in Atlanta, Australia, Athens, and Beijing) and has taught and lead dozens of Study@Sea cruise ship management beverage management & strategy courses around the world. Since 2007, Dr. DeMicco has been supported and is working with the Foundation of the Bank of Volterra to open a new modern campus in the center of Tuscany called the Learning Village in Tuscany for management students and for all students in the Arts & Sciences.
Dr. DeMicco completed his Ph.D. in Hotel, Restaurant and Institutional Management at Virginia Polytechnic Institute and State University under the direction of Dr. Michael D. Olsen. He also completed the MBA Core in the Pamplin College of Business at VPI & SU. Dr. DeMicco worked in Management at Walt Disney World, Orlando, Florida. He has also been employed by Aramark International, Marriott Vacation Club International and several healthcare operations including assisted living facilities.
He has authored or co-authored nearly 100 refereed articles in the area of strategic management and he has co-authored several books including: Restaurant Management: A Best Practices Approach to Food & Beverage Management; Medical Tourism and Wellness with Apple Academic Press/Taylor Francis; Hospitality 2015: The Future of Hospitality & Travel (2010) with the Educational Institute of the American Hotel and Lodging Association with the next Strategy & Trends text book by Kendall-Hunt released in 2019. Dr. DeMicco is on the Editorial Advisory Board of the Journal of Hospitality & Tourism Research and several other notable research journals.
Dr. DeMicco was the President of International CHRIE –NENA (North East North American Federation). He was presented the International CHRIE/Cornell Howard B. Meek Award of Excellence for 2017.
Active in funds development and university advancement, Dr. DeMicco has been responsible for raising several million dollars in the past decade and a half.
